ELSTAR
Elstar is one of those apples that manages to feel both classic and modern at the same time. Developed in the Netherlands in the mid-twentieth century from a cross between Golden Delicious and Ingrid Marie, it was bred to capture the sweetness of Golden Delicious while adding a brighter, livelier character. The result is a beautifully balanced apple that has become a favourite across Europe and increasingly in North American orchards. It is handsome on the tree as well, glowing yellow beneath a warm orange-red blush that seems to deepen as the fruit ripens.
Take a bite and the appeal is immediate. Elstar is crisp and juicy with a lively balance between sweetness and acidity. The flavour carries hints of honey and soft citrus, with just enough brightness to keep it refreshing. It is a very satisfying apple to eat fresh, the sort that feels light and clean on the palate rather than heavy or sugary. That balance also makes it a versatile kitchen apple. It performs beautifully in baking where the flavour holds up well and the flesh softens into a pleasant texture without completely losing structure.
Origin: Netherlands, introduced in the 1950s from a cross between Golden Delicious and Ingrid Marie.
Appearance: Medium-sized apples with yellow skin largely covered by a bright orange-red blush. The skin is smooth and the fruit has a round, slightly flattened shape.
Flavour: Well balanced and lively with a mix of sweetness and refreshing acidity. Notes of honey, citrus, and light spice are often present.
Keeping: Moderate keeper. When stored cool it maintains good flavour and texture for several weeks, though it is best enjoyed not too long after harvest.
Uses: Excellent for fresh eating thanks to its crisp texture and balanced flavour. Also performs well in baking, sauces, and light desserts where its sweet-tart character carries through the dish.
