But give it a bit of time, and it settles. The skin warms to a deeper gold, the sugars come forward, and the flavour finds its balance. By mid-winter, it has turned into something quietly exceptional.
When it’s ready, GoldRush offers a firm, satisfying crunch and a clean, juicy bite. The flavour is bright and focused, with a strong sweet-tart balance and notes of honey and citrus that linger just long enough. It is refreshing without being thin, and rich without being heavy. It’s an apple that holds your attention in a steady way, and it performs just as well in the kitchen, where its acidity keeps baking lively and structured.
Origin: United States, introduced in the 1990s from a Purdue, Rutgers, and Illinois breeding program.
Appearance: Medium-sized, round fruit with smooth skin that ripens to a warm golden yellow, often marked with small, scattered lenticels.
Flavour: Balanced and lively, with a strong interplay of sweetness and acidity. Honey and citrus notes become more pronounced with time in storage.
Keeping: Excellent keeper. One of the best for long storage, with flavour improving significantly over several months in proper cold conditions.
Uses: A versatile apple suited to both fresh eating and baking. Particularly strong in pies, crisps, and sauces, where its acidity and structure hold up well and prevent dishes from becoming overly sweet.
