RUBINETTE
Rubinette is a flavour-first apple. It was bred in Switzerland from Cox’s Orange Pippin and Golden Delicious, and you can taste both in the best way. It’s not a big or flashy apple, but once you bite into it, it stands out. Crisp, juicy, and aromatic, it carries a clear balance of sweetness and acidity that feels deliberate and well put together.
The flavour is where it really earns its place. There’s a clean honeyed sweetness, a bit of citrus brightness, and just enough spice to keep it interesting. Nothing feels forced or exaggerated. It’s simply a very complete apple. Best eaten fresh, when that balance is at its peak, Rubinette is the kind of apple you give to someone who thinks apples are boring and then watch them reconsider.
Origin: Switzerland, 1960s. Bred from a cross between Cox’s Orange Pippin and Golden Delicious.
Appearance: Small to medium fruit with a yellow base and orange-red striping. Slightly rustic and understated in appearance
Flavour: Balanced and expressive with notes of honey, citrus, and light spice. Sweet-tart with strong aromatics.
Keeping: Moderate. Best within a couple of months of harvest while texture and flavour are at their best.
Uses: Excellent for fresh eating. Also suitable for juice and cider where its balance and aromatics come through well.
